A blender (sometimes called a liquidiser in British English) is a kitchen and laboratory apparatus used to mix, purée, or emulsify foods and other substances. A stationary blender consists of a mixer bowl with a rotating metal blade at the bottom, driven by an electric motor that is the base. Some powerful models can also crush ice and other frozen foods. The newer submersible mixer configuration has a motor at the top connected to a shaft with a rotating blade at the bottom that can be used with any container.

Countertop blenders use a mixing container with a volume of 1-2 litres (4-8 cups) made of glass, plastic, stainless steel. Glass blenders are heavier and more stable. Plastic tends to scratch and absorb the smell of blended food. Stainless steel is preferable due to its appearance, but it limits food visibility when it is stirring.

Countertop blenders generally offer 3-16 speed settings, but having more options for choosing speed settings does not mean better utility for all users.

When the blades are replaceable, the container should have an o-ring or seal between the container body and base to seal the container and prevent the contents from leaking. The mixing vessel is usually shaped to circulate the material through the blades rather than simply rotating around it.

The container rests on a base that contains a motor for rotating the blade and controls its surface. Most modern blenders offer several possible speeds. Low power blenders require a small amount of liquid to be added to function properly. In these mixers, the liquid helps move the solids around the jar, bringing them into contact with the blades. The blades create a swirling effect that moves hard parts from top to bottom, ensuring uniform contact with the blade. This makes a uniform mixture. Without such assistance, powerful blenders can crush grains and break the ice.

A handheld immersion blender, stick blender, hand blender, stick blender or wand blender does not have its container but instead has a mixing head with rotating blades that can be submerged into the container. Immersion blenders are handy for homogenizing volumes that are too large to fit in the bowl of a stationary blender or, as in the case of soups, are too hot to pour into the bowl quickly.

A submersible blender operation requires the user to hold down the switch while the blades are running, which can be tedious for the user.

Hand mixers are ideal for small and specific tasks but are not as widespread as stand mixer.
