Breakfast is an essential meal eaten in the morning. This word in English means breaking of the period of fasting the previous night. There is a high likelihood that most places have one or more “typical” or “traditional” breakfast menus. Still, their composition varies significantly from place to place and over time, so there is an extensive range of preparations and ingredients worldwide already associated with breakfast.

The English word for “dinner” (from the Old French dinner) also referred initially to breaking the fast; until its meaning passed into the middle of the 13th century, this name was given to the first meal of the day. It wasn’t until the 15th century that the word “breakfast” began to be used in written English to describe morning meals: literally, a breaking of the night’s fasting period just ended. In Old English, the word was morgenmete, which means “morning meal.” Although breakfast is commonly referred to as “the most important meal of the day,” some epidemiological studies have shown that eating high-availability carbohydrates breakfast increases the risk of metabolic syndrome. This is a professional opinion mainly in favor of breakfast, but some contest the positive effect of its “most important” status. The impact of breakfast on weight control is unclear.

Most Egyptians start their day with a snack. Ful medames (dish of cooked fava beans), one of Egypt’s several national dishes, is typical. Season with salt and caraway seeds garnished with vegetable oil and, if desired, tahini, chopped parsley, chopped tomatoes, garlic, onions, lemon juice, chilli peppers and often top with a boiled egg. Breakfast is served with a staple bread called Eish Masri or Eish Baladi (عيش [ʕeːʃ]; modern standard Arabic: ayš) and is usually accompanied by taʿamiya (Egyptian Arabic: طعمية), which is the local version of falafel made with fava beans, freshly cut homemade fries and a variety of fresh or pickled vegetables (called torshi). Several types of cheese are widespread, including bēḍa or Domyati, gebna rumi (Roman cheese similar to pecorino romano or manchego), and istanbuli cheese (brine with pepper added to the brine to make it spicy). Fried eggs with pastirma is also a typical breakfast in Egypt.

Nigeria is home to over 250 different ethnic groups with a corresponding variety of cuisines. For Hausa in Northern Nigeria, a typical breakfast consists of kosai (cakes made from ground beans that are then fried) or funkaso (wheat flour soaked for a day, then fried and served with sugar). Both of these cakes can be served with porridge and sugar, known as Koko.
