Formerly, the ancient Greeks believed that the herb thyme gave them courage. Today, thyme leaves are used for cooking and are commonly found in a variety of savory dishes that are easy to prepare.
For a simple side dish, a variety of different mushrooms can be sliced and sautéed with garlic and thyme herbs. When you make roasted meats, at the end of cooking the roast, you can remove it then use a little wine to deglaze, or loosen the small pieces that stick to the bottom of the pan, then take these juices, add the thyme with herbs and cook until very concentrated in flavor. Poultry can also be roasted with a few tablespoons of lemon juice, a little chopped garlic and a pinch of thyme leaves to impart a wonderful flavor. Garlic bread can be made with grated cheese, such as mozzarella, on top, mixed with dried thyme. This type of cheese toast is wonderful with a variety of hearty soups for a simple but satisfying dinner. Familiar comforting macaroni and cheese can be improved with the addition of dried thyme, diced tomatoes and sautéed mushrooms.
Vegetables often benefit from the judicious use of thyme spices. You can drastically improve the flavor of winter tomatoes by cutting them in half, placing them cut side up on a baking sheet, using a pastry brush to spread olive oil on them, and then sprinkling over part of the herb thyme. Roast them in the oven for a few minutes to let some of the moisture inherent in vegetables cooks out. This process produces an easy side dish that has a considerably intensified tomato flavor and works particularly well with a paste tomato like a Roma or San Marzano, as they have less moisture than other varieties of tomatoes.
You can make a delicious white sauce partially flavored with thyme herbs. Melt the butter in a thick non-stick pan like cast iron, then add an equal amount of flour and whisk continuously to cook. Add the seafood stock to the mixture which, as it cooks, thickens. Half and half can then be added, along with tiny shrimp, clams, smoked salmon, garlic, black pepper and thyme leaves. Another delicious addition is sherry or white wine to cook. This herb thyme sauce is surprisingly used as a pizza topping or on fresh hot pasta, with white cheese sprinkled on both before serving.
