Green beans are not only a beautiful, soft, low-calorie food, but they also provide many essential nutrients. However, green beans are an excellent source of vitamin C, dietary fiber, folic acid, vitamin K and silicon (necessary for healthy bones, skin and hair).

Silicon, at a lower pressure than calcium and magnesium, plays an important role in bone health and the formation of strong, healthy connective tissue such as blood vessels, cartilage and tendons. Silicon is often found in products designed to promote the strength of hair, skin and nails. It is known to affect the elasticity of the skin and can play a role in the prevention and treatment of osteoporosis, which is an effective anti-aging nutrient.
To keep the nutrients as long as possible when cooking green beans, it is best not over-cooking. Generally, light steaming or frying is the preferred method.
