Green beans are not only a beautiful, soft, low-calorie food, but they also provide many essential nutrients. However, green beans are an excellent source of vitamin C, dietary fiber, folic acid, vitamin K and silicon (necessary for healthy bones, skin and hair).

Green beans are one of the key ingredients in a healthy diet. They are rich in vitamins and fiber and are an outstanding source of many important minerals and antioxidants. Even better, they can be easily prepared in a variety of delicious ways.

Green beans are known to be an excellent source of antioxidant flavonoids such as quercetin and kaempferol. Flavonoids are found in many fruits, vegetables and flowers and often give a bright color. Green beans are rich in flavonoids, but they always look green because they are very rich in chlorophyll pigments. They also provide high levels of antioxidants, and studies have shown that they can help prevent breast, prostate, ovarian, colon, and lung cancer.

Several reports have linked these flavinoids to an improvement in LDL or “bad” cholesterol with symptoms of rheumatoid arthritis and also with respiratory diseases such as asthma, hay fever and allergies. Green beans are also an excellent source of lutein and beta carotene and are known to have a positive effect on occular health.

Green beans are also rich in minerals, especially Silicon, a little-known but particularly useful mineral. Silicon, at a lower pressure than calcium and magnesium, plays an important role in bone health and the formation of strong, healthy connective tissue such as blood vessels, cartilage and tendons. Silicon is often found in products designed to promote the strength of hair, skin and nails. It is known to affect the elasticity of the skin and can play a role in the prevention and treatment of osteoporosis, which is an effective anti-aging nutrient.

To keep the nutrients as long as possible when cooking green beans, it is best not over-cooking. Generally, light steaming or frying is the preferred method.
