A restaurant (French: [ʁɛstoʁɑ̃] or eateries is a business that prepares and serves food and drinks to customers. Meals are usually served and eaten locally, but many restaurants also offer take-out and delivery services. Restaurants vary greatly in appearance and offer a wide variety of cuisines and service models, from cheap fast-food restaurants and cafes to mid-priced family restaurants to high-priced luxury restaurants.

In Western countries, most mid to high-end restaurants serve alcoholic drinks such as beer and wine. Some restaurants serve all main meals such as breakfast, lunch and dinner (for example, large fast-food chains, diners, hotel restaurants and airport restaurants). Other restaurants may only serve one meal (for example, a pancake house may only serve breakfast) or two meals (for example, lunch and dinner).

The restaurant, in its today’s understanding, existed only at the end of the 18th century. Sitting in a public restaurant specifically for a fixed-menu meal with a waiter is a relatively recent concept in culinary history.

It is believed that the first use of the word to refer to a public place where food can be ordered dates back to the 18th century. In 1765 the French chef A. Boulanger opened a business selling soups and other “restaurants”. In addition, while it is not the first restaurant to offer food or even soups, it is considered the first to offer a menu with options available. La Grande Taverne de Londres in Paris, founded by Antoine Beauvilliers either in 1782 or 1786, is considered the “first real restaurant”. According to Brillat-Savarin, it is “the first to combine the four essentials of an elegant room, smart waiters, a choice cellar, and superior cooking”. In 1802, the term was applied to a restaurant that served restorative dishes. For example : bouillon, a meat broth, was served (établissement de restorator).

Restaurants are classified and differentiated in different ways. The main factors are usually the food itself (e.g. vegetarian, seafood, steak); cuisine (such as Italian, Chinese, Japanese, Indian, French, Mexican, Thai) or serving style (such as tapas bar, sushi train, tasting restaurant, buffet restaurant, or yum cha restaurant). In addition, restaurants can be distinguished by factors such as speed, formality, location, price, service, or novelty (e.g. automated restaurants). Some of these include fine dining, casual dining, contemporary casual, family-style, daily fast food, fast-casual, cafes, buffets, stalls, food vans, pop-up restaurants, and ghost restaurants.
